As a highly recognized expert in her field, Dr. Pitts was chosen as the Weight Control & Eating Disorder Specialist of the Year 1999.   • Opening a can of beans (kidney, garbanzo, or black beans).
  • Dicing smoked or baked tofu or adding cooked edamame (green soybeans).
  • Tossing in diced, reduced-fat cheese (try reduced-fat Jack or cheddar, part-skim mozzarella, fresh mozzarella, or soy-based cheeses).

Ingredients:

  • ½ c. plain yogurt combined with ½ tsp curry powder
  • 4 c. lowfat chicken broth
  • ¾ lb. broccoli florets
  • ½ lb zucchini

Instructions:

Put chicken broth, broccoli, and zucchini in pot and bring to a boil. Simmer for 5 minutes and puree ingredients. Mix yogurt and curry powder in a separate bowl. Serve soup hot with dollop of yogurt curry on top. Enjoy!
